Just turn on your wood-burning oven in steel: after about 40 minutes it will have reached the cooking temperature, unlike refractory ovens that need at least 3 hours of irradiation from ignition.
Structural Composition of the Steel Wood-fired Oven
Our goal is to create wood-fired steel ovens, which are practical and light, but which can cook pizza like professional ovens.
To make this happen, the oven must be able to retain the heat and then release it constantly at temperatures of 850° F, ideal for cooking Neapolitan Pizza.

The insulation system of the steel wood-fired oven has been designed to contain and retain high temperatures, to then release them constantly.

Unlike common stainless steel pizza oven ovens, our oven has a smaller mouth to better retain heat while minimizing wood consumption.
It comes with a complex and ingenious boiler independent of the external structure.
The boiler is made up of a 0,12 Inc welded watertight 304 stainless steel structure, expressing a domed arch, designed to wrap the flame at the perfect point for cooking the Pizza.
The flame heats the 0,12 boiler by radiation, which by absorbing the heat releases it throughout the oven, including the highly insulating base composed of sand and Biscuit Di Sorrento.
Between the internal boiler and the external satin-finished sheet there is an additional 4 inc thick insulating layer, filled with rock wool in order to further retain the boiler temperature.

The cooking surface is made up of a surface in “Sorrento Biscuit” with a total size of 31,5 inc X 31,5 inc and a height of 2 inc, superimposed on 1,2 inc of insulating sand.
The tradition of the Neapolitan wood-fired ovens is distinguished also thanks to the Sorrento Biscuit, an exclusive cooking surface worked according to ancient traditions and secrets, today known all over the world.
The Sorrento biscuit is worked by hand, and baked in special ovens at a temperature of 2200 ° F.
The qualities that distinguish this stone from the common refractory bases and its ability to retain high temperatures in an optimal way for cooking the lower part of the pizza.
Thanks to this fantastic cooking surface, it is possible to cook a large number of consecutive pizzas without the stone cooling down, guaranteeing constant optimal cooking.
